Duck Pad Thai
As a young culinary student I would go to the university district to frequent Tahi Tom, a hole in the wall Thai restaurant. Standing room only with five or 6 seats at the bar. I remember watching the Chef rock the wok while he made my Pad Thai. His unceasing movement made him out to be more of a prizefighter or dancer than a cook. In that moment I recognized how the abundant colors and flavors that make up this colorful dish were also reflective of the method of cookery. Have fun and turn up the heat on this one!
