Lobster Aguachille

Ingredients

For the Marinade

• 1 tablespoon achiote paste

• 6 garlic cloves, chopped, about 2 tablespoons

• 1/2 teaspoon freshly ground black pepper

• 1/4 cup freshly squeezed lime juice

• ½ teaspoon Montana Mex Jalapeño seasoning

• 1/2 teaspoon sea salt

• 3 (8-ounce) spiny tail lobster tails

• 1 tablespoon oil

For the Aguachille

• 1/2 white onion, chopped

• 2 cup chopped cilantro

• 1 poblano pepper, chopped into 1- inch pieces, seeds removed

• 1/4 cup freshly squeezed lime juice

• ½ teaspoon Montana Mex Jalapeño seasoning

• 1/2 teaspoon sea salt

• 1/4 cup water

• sliced cucumber and pickled red onions, to serve
